- Light brown sugar: 1/3 cup (65 g)
- Ground cinnamon: 1/2 tsp (for apple filling)
- Cake pop sticks or lollipop sticks: 16
- Caramel sauce: 1/3 cup (80 ml), store-bought or homemade
- Rainbow sprinkles: 1/4 cup (30 g)
- Powdered sugar: 1/2 cup (60 g)
- Milk: 1–2 tsp (for glaze)
Instructions
- Preheat & Prep:
- Preheat oven to 375°F (190°C). Grease mini muffin tin.
- Caramel Apple Filling:
- Cook diced apple in 2 tbsp butter, brown sugar, and 1/2 tsp cinnamon over medium heat until tender and caramelized (4–5 min). Cool mixture.
- Dry Mix:
- In mixing bowl, whisk flour, sugar, baking powder, salt, and 1 tsp cinnamon.
- Cut in Butter:
- Cut cold butter into dry mixture until coarse crumbs form.
- Wet Mix:
- Whisk milk, egg, and vanilla. Add to dry mixture. Stir until just combined.
- Folding:
- Gently fold in cooled caramel apple mixture.
- Scoop & Bake:
- Fill muffin cups 3/4 full. Bake for 16–18 min, until golden and toothpick comes out clean. Cool 5 min, then transfer to rack.
- Assembly:
- Insert cake pop stick into base of each cooled muffin.
- Decorate:
- Drizzle with caramel sauce and glaze (powdered sugar mixed with milk). Top with rainbow sprinkles. Let set.
