# Method:

01 - Preheat oven to 375°F. Grease a mini muffin tin or line with paper liners.
02 - In a skillet over medium heat, melt 2 tablespoons butter. Add diced apple, light brown sugar, and 1/2 teaspoon cinnamon. Cook, stirring occasionally, until apples are tender and caramelized, about 4 to 5 minutes. Remove from heat and allow to cool.
03 - In a mixing bowl, whisk together flour, granulated sugar, baking powder, salt, and 1 teaspoon cinnamon.
04 - Cut cold butter into the flour mixture using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
05 - In a separate bowl, whisk whole milk, egg, and vanilla extract. Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
06 - Fold the cooled caramelized apple mixture into the batter.
07 - Scoop batter into the prepared mini muffin cups, filling each about 3/4 full.
08 - Bake for 16 to 18 minutes, or until golden and a toothpick inserted in the center comes out clean.
09 - Cool in the pan for 5 minutes, then transfer muffins to a wire rack to cool completely.
