01 - 1/2 cup ube halaya (purple yam jam)
02 - 1/4 cup water
03 - 2 tablespoons granulated sugar
04 - 1/2 teaspoon vanilla extract
→ Latte
05 - 1 cup whole milk or dairy-free alternative
06 - 2 shots espresso or 1/2 cup strong brewed coffee, cooled
07 - 1 cup ice cubes
→ Optional Toppings
08 - Whipped cream
09 - Pinch of ube powder or purple yam flakes
# Method:
01 - Combine ube halaya, water, and granulated sugar in a small saucepan. Heat over medium, whisking constantly, until the mixture is smooth and slightly thickened, approximately 5 minutes. Remove from heat and stir in vanilla extract. Allow syrup to cool completely.
02 - Fill two tall glasses with ice cubes. Spoon 2 to 3 tablespoons of cooled ube syrup into each glass.
03 - Pour 1/2 cup whole milk or preferred dairy-free alternative over the ube syrup in each glass.
04 - Gently pour 1 shot espresso or 1/4 cup brewed coffee into each glass to create a layered effect.
05 - Stir thoroughly before drinking to blend the flavors. Garnish each glass with whipped cream and a sprinkle of ube powder or purple yam flakes if desired.
