02 - 1/3 cup chia seeds
03 - 2 tablespoons maple syrup
04 - 1 teaspoon pure vanilla extract

05 - 1 teaspoon matcha powder
06 - 1/4 teaspoon natural peppermint extract
07 - Optional: 2 to 3 drops natural green food coloring

08 - 2 tablespoons dairy-free yogurt
09 - 1 tablespoon cacao nibs or vegan chocolate chips
10 - 1 tablespoon fresh mint leaves, chopped

# Method:
01 - In a medium bowl or large jar, whisk together almond milk, chia seeds, maple syrup, and vanilla extract until well combined.
02 - Blend matcha powder, peppermint extract, and green food coloring with 2 tablespoons of the chia mixture until smooth.
03 - Stir the matcha-mint mixture back into the remaining chia pudding base until evenly distributed and vibrant green.
04 - Cover and refrigerate the mixture for at least 4 hours, preferably overnight, allowing it to thicken to a pudding consistency.
05 - Before serving, stir the pudding well. Spoon into bowls or glasses and garnish with yogurt, cacao nibs or chocolate chips, chopped mint, and berries as desired.
