# Method:
01 - Preheat oven to 300°F. Line a baking sheet with parchment paper.
02 - In a large, clean bowl, use an electric mixer to beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff, glossy peaks develop.
03 - In a separate bowl, combine egg yolks, cornstarch, and vanilla extract, whisking until smooth.
04 - Gently fold the egg yolk mixture into the whipped egg whites, taking care not to deflate the volume.
05 - Divide batter equally into separate bowls for each color. Add a few drops of desired gel food coloring into each bowl and gently fold to incorporate.
06 - Spoon each colored batter onto the prepared baking sheet, arranging side by side for a rainbow effect. For a marbled look, swirl gently with a spatula.
07 - Place baking sheet in the oven and bake for 25 minutes until set and lightly golden.
08 - Allow to cool for several minutes before carefully lifting off the parchment paper. Serve immediately for optimal fluffiness.
