# Method:

01 - Set the oven to 425°F and line a baking sheet with parchment paper.
02 - Rinse delicata squash under cold water, cut off the ends, then slice into ½-inch rings. Carefully scoop out seeds from each ring using a spoon.
03 - Place squash rings in a large bowl and toss with olive oil, maple syrup, sea salt, black pepper, and ground cinnamon until evenly coated.
04 - Lay the coated squash rings in a single layer on the prepared baking sheet.
05 - Bake for 20 to 25 minutes, turning the rings halfway through, until they are golden brown and tender.
06 - Transfer the roasted squash to a serving dish immediately and sprinkle with chopped pistachios and parsley if desired. Serve warm.
