# What You'll Need:

→ Base

01 - 2 large 10-inch flour tortillas

→ Sauce

02 - 4 tablespoons pizza or marinara sauce

→ Cheese

03 - 1 cup shredded mozzarella cheese

→ Toppings

04 - 8 to 10 slices pepperoni (optional)
05 - ¼ cup sliced black olives
06 - ¼ cup sliced mushrooms
07 - ¼ cup diced bell peppers
08 - 2 tablespoons chopped red onion
09 - 1 tablespoon fresh basil leaves (optional)

→ For Cooking

10 - 1 tablespoon olive oil or butter

# Method:

01 - Place one tortilla flat on a cutting board and cut from the center to the edge creating a radius cut.
02 - Spread 2 tablespoons of pizza sauce evenly over the tortilla, leaving a small border around the edges.
03 - Sprinkle half a cup of shredded mozzarella cheese evenly over the sauced tortilla.
04 - Distribute desired toppings across each quarter section of the tortilla, such as pepperoni on one quarter, olives on another, and assorted vegetables on remaining sections.
05 - Starting at the cut, fold each quarter over the next to form a layered triangular wrap. Repeat the process with the second tortilla.
06 - Warm olive oil or butter in a large nonstick skillet over medium heat.
07 - Place wraps seam-side down in the skillet and cook for 3 to 4 minutes per side, pressing gently, until golden brown and cheese has melted.
08 - Remove from skillet, allow to cool slightly, then cut in half if desired. Serve warm.

# Expert Advice:

01 -
  • It's ready in under 20 minutes, which means dinner can actually happen on nights when you're running behind.
  • The crispy edges and melted cheese center hit differently when you've folded it yourself instead of ordering takeout.
02 -
  • Don't skip the border of empty space when spreading sauce, or it will leak out the sides and make your pan a mess while the tortilla steams instead of crisps.
  • Medium heat is crucial because high heat will burn the outside before the cheese melts inside, and low heat makes everything flabby and greasy.
03 -
  • Brush the outside of the folded wrap lightly with olive oil before cooking if you want extra crispiness and color without adding grease to the pan.
  • Use low-moisture mozzarella instead of fresh so the wrap stays crispy instead of steaming itself into softness.
