# Method:
01 - In a mixing bowl, whisk the eggs with milk, salt, and pepper until fully combined. Melt butter in a nonstick skillet over medium heat, pour in the egg mixture, and gently scramble with a spatula until just set. Remove from heat and keep warm.
02 - Lightly spread Dijon mustard on the bottom halves of the mini croissants, if using. Layer each with a slice of ham, a slice of cheese, a spoonful of scrambled eggs, a slice of tomato, and a few arugula or spinach leaves. Top each with the remaining croissant halves and secure with toothpicks if needed.
03 - On a large serving platter or board, arrange the croissant sandwiches along with mixed berries, grapes, sliced cucumber, baby carrots, cherry tomatoes, and assorted cheeses. Add small bowls of jam, honey, and nuts to the platter as desired for guests to serve themselves.
